Instructions to make Gajarela Rabdi Truffle Jars:
- For gajar ka halwa in a pan add ghee and then crushed carrots in it.
- Cook the carrots until they come on oil.
- Then add elaichi powder & khas khas.
- Cook again for 7 to 10 mins until it look like this.
- Now add milk, malai and chopped nuts.
- Cook until all the milk is soaked fully. Then add sugar.
- Cook until carrots are cooked fully & all the water released from sugar is evaporated. Cool in Refrigerator.
- For rabdi in a pan add preboiled 2 litres milk and cook until boils come. Cook on full flame.
- Cook on med flame for 5 10 mins and then add 2 tsp curd. (This will make lachhas in rabdi)
- Now cook milk on med to low flame for 30 to 35 mins until properly reduced.
- Then add sugar and again cook for 7 to 10 mins.
- Cook until proper consistency is achieved. Remember rabdi will thicken once its cooled so dont let it thicken too much.
- Now cool both the things and then layer in jars and again refrigerate for 2 to 4 hours until set. Garnish with dried rose petals & pistachios.
