Vegetable biryani is an aromatic rice dish made by cooking basmati rice with mix veggies, herbs & biryani spices. Traditionally Biryani was made by dum cooking marinated meat with basmati rice & spices. Making a vegetarian version becomes much simpler as the veggies need no marination. Layers of long grain basmati rice and mixed vegetables cooked under dum - this one is a microwave version of a classic vegetable dum biryani.

The ingredients needed to make Mix veg biryani:
- Get 1 TBS ghee 1 bay leaf / tej patta
- Make ready Jeera half spoon
- Prepare 1 spoon Coriander powder
- Get 1 pinch Red chilly powder

- Take 1/2 tsp ginger garlic paste onion, finely chopped½ carrot

Veg biryani recipe is incomplete without rice. I recommend using a long grain extra-large basmati rice. I personally use India Gate basmati rice for cooking biryani. Soak rice in a cup of water for a minimum of one hour, prior to using it for cooking vegetable biryani.
Instructions to make Mix veg biryani:
- Firstly in a large kadai heat 1 tbsp ghee and saute 1 bay leaf, 1 inch cinnamon, 1 star, ¼ tsp shah jeera till turns aromatic.
- Further add 1 onion and saute well.
- Also add ½ tsp ginger garlic paste and continue to saute.
- Now add ½ carrot, ¼ potato, ¼ capsicum, 8 florets gobi and 3 beans.
- Saute well making sure the vegetables are cooked well.
- Furthermore add ¼ cup curd, ½ tsp chilli powder
- Saute well making sure the spices and curd are cooked well. and also oil releases from sides.
- Now add 2 tbsp pudina and 2 tbsp coriander leaves.
- Further add 2 cups of cooked basmati rice and mix gently.
- Mix well making sure the rice grain doesn’t break.
- Mix well and serve hot.
I personally use India Gate basmati rice for cooking biryani. Soak rice in a cup of water for a minimum of one hour, prior to using it for cooking vegetable biryani. Veggies: so traditionally meat is used in biryani but since we are making veg biryani, we are using assorted vegetables here. I have used potato, cauliflower, beans and carrots. You can use green peas, mushrooms or even paneer would be a good addition.
