- Preheat oven 150 degree ahead of your prepping
- Mix the egg with the diced Bell pepper, onions, tomatoes and the red pepper. Add knorr cube and salt. Then pour in the plantain and mix well
- Dice the plantain, Bell pepper, onions, tomatoes, red pepper. Fried the diced plantain. Break and mix the egg in a bowl and set aside
- Pour into an oven dish, place the on it and put in the oven for 30mins
- After 30minutes, remove from oven allow it cool off a bit then serve
