  1. Prepare 850 gms Mango Pulp (from approx 1.5 kgs mango)
  2. Take 400 gms Gur /jaggery
  3. Take 2 Lemon juice
  4. Make ready 500 ml Water

Steps to make Mango Squash (Concentrate):
  1. Peel the mango and smash it it with your hand, once done discard the seeds and blend it with an electric stick blender or in a mixture grinder blender jar to form smooth puree.
  2. In a big pot add Jaggery(powdered) and water and put on the flame and melt the Jaggery…it takes around 5 minutes or so….then let it simmer for more 5 minutes or so and then add the mango Pulp and lemon juice and mix it and keep in stirring frequently so that it doesn't stick to the bottom and cook for another 20-25 minutes or so till it thickens but don't dry it and make it too thick like a jam.
  3. You can judge it with your eyes…when it's about to be done the Jaggery tadye cooked in it that means your mango squash is done, strain it through a sieve so that you get a smooth mango squash. Once cool keep it in the fridge and when you want to have mix and dilute it with chilled water as per your desired liking and have it as a cool refreshment in the hot summer! About 3 tbsps / 45 ml is enough for a glass of mango squash.
