To begin with this particular recipe, we have to first prepare a few ingredients. You can have aam panna concentrate using 10 ingredients and 3 steps. Here is how you can achieve it.

The ingredients needed to make Aam Panna Concentrate:
  1. Prepare 500 gms Raw Green mangoes
  2. Get 350 gms Jaggery /Gur or Sugar (I prefer Jaggery)
  3. Make ready 1 litre water
  4. Take 1/2 tsp Salt
  5. Make ready 1 tsp Black Rock salt
  6. Make ready 1 1/2 tsp Roasted Cumin seeds powder
  7. Get 1 tsp Crushed Black Peppercorns
  8. Get 1 inch ginger
  9. Make ready 3 tsp Lemon juice
  10. Take Handful mint leaves

Cover and place it over flame for heating. Aam panna concentrate -A very popular and refreshing raw mango and mint drink Aam Panna OR Kairi Panha- It's an excellent drink for hot summer.   1. As I had seeds from other raw mangoes so I boiled it with water for 15-20 minutes. In the meantime, I roasted the mangoes in direct flame, put it in aluminium foil and left it to cook in it's own heat and cool it too to the handling temperature…then peeled it and added it to the boiling mango seeds water. (If you don't have leftover mangoes seeds start with the roasted mango)
  2. Then I roughly grinded the mint and ginger and added that too. After that I added Jaggery (which I had powdered), lemon juice, roasted Cummin powder, crushed black pepper, black rock salt and salt and mixed it and kept on stirring frequently…and cooked till the liquid reduced by 50%-60% and thickened. It took me around 25-30 minutes in an open thick bottom steel pan on high flame.
  3. Cool the Aam Panna Concentrate and fridge it and dilute with chilled water in the ratio of 3.5 : 1(water : Aam Panna Concentrate), whenever you feel like having and refreshing yourself.
