  1. Preheat oven 220degree and then roughly blend pepper, onion, garlic and ginger and set aside
  2. Peel plantain, apply little veg oil all over the plantain; place in an oven tray and bake in the oven for 15 to 20 mins

  4. Mix the blended mix in a bowl, add veg oil, dry herbs, salt and bouillon cube apply all over the fish and marinade for 20mins and above
  5. Place on a wire rack over an oven tray and bake for 20 to 25mins
  6. Heat up the remaining marinade oven medium heat and cook for 3 mins, remove from heat and serve on the fish.
