  5. Take 1 tbsp Sooji
  6. Prepare as needed Oil or Ghee for frying
  7. Make ready 1/8 tsp food colour
  8. Take 3-4 Cardamoms
  9. Prepare as needed Kesar(safforn) for flavour
  10. Get as needed dry fruits (Cashew, Almond, Pistachios) for garnishing

Instructions to make Sweet Boondi:
  1. In a bowl take Besan, Sooji and water. Mix to form a free flowing better. Rest it for 15min.
  2. Heat oil or ghee in a pan on medium-high flame. Place the ladle above the surface of oil. When oil is hot, pour better into the ladle. Let it fall on its own
  3. Fry boondi till little crispy, remove boondi from hot oil. Repeat the same process.
  4. To make Sugar Syrup, in a pan take sugar and add water in it. When sugar dissolves add food colour, Elaichi and Kesar in it. Boil for 2min. Syrup must be sticky no need of string in it.
  5. Turn off the gas. Add fried boondi and mix well. Cover the lid till boondi soaks all the sugar syrup. Stir the boondi every one hour. Let sit over night, sugar in the syrup is crystallized. Add Cashew, Almond, Pista etc in it.
  6. Store Sweet Boondi in air tight container and serve it after meals or as prasad.
