  1. Soak the rice in water for 30 minutes.after the rice has soaked,drain the water.
  2. Heat a play full of water,add cardamom,cloves,salt to it.let it come to a boil.
  3. Let it cook uncovered (don't lower the heat) until it's almostcooked (around 70% cooked but not fully cooked) remove pan from heat and drain rice in a colander.add a teaspoon of ghee to the rice.
  4. Caramelized onion& cashews and pan dry the veggies.
  5. Heat oil in to the pot on medium heat.add cumin seed's.cinnamonstick,cardamom,cloves and add ginger,garlic,green chillies paste. After add cauliflower, beans,and carrots,peas
  6. Add yogurt in the pot and heat up until it absorb.add the biryani masala and Kashmir red choli powder.
  7. Then make 2 layer of rice in between veges.
  8. Spread mint leaves and add prepared saffron milk on the top. On top add the rose water 1 spoon.
  9. Cover the pot tightly with aluminium foil. Then cover with a fitted lid.
  10. Heat a flat pan on medium heat. Once hot,reduce the flame to lowest.place your biryani pot on top of the pot let it cook for 25 to 30 minutes on lowest heat (dum).
  11. Serve veg biryani with a side of raita and papad.
