- Increase the heat to a medium high to cook off the water
- Crack the eggs in to the spicy tomato mixture and cover with the lid, cook for 5 minutes
- Take the lid off and reduce the sauce further to a thick consistency. Once the desired consistency is reached, switch the heat off
- Add coriander, jelapenos, red onion, sour cream and feta cheese.
- Place the corn tortilla in a frying pan, turn over after 20 seconds, wait another 20 seconds and transfer it to a plate, repeat for the other tortillas
- Heat the refried beans in the microwave for 2 minutes and spread a heaped spoon evenly on each tortilla
- Spoon the mexican egg mixture on to the torilla and garnish some more or eat it with guacamole
