- Whisk the eggs for a 1 minute add the milk and whisk. Next add the pancetta to a little olive oil and fry.
- Greace your muffin tray. Then pour the egg milk mix in each one. Leaving a quater inch gap at the top. Add salt n pepper to the egg mix. Next sponn in a little tsp pancetta in the egg.
- Next add a little onion.( do this while the oven gets hot 200C. Then dice tomatoes and add to each muffin. Then add the cheese
- You can add any Filling you like really. Cooked Sausage chopped up, Bacon, sweet peppers anything like that. Also they just fit on a Brioch Bun nicely.
- Add the muffin tray to to the oven and check after 10 minutes see if they are browned and solid. Use a large spoon to just lift the muffin out gently.
Stir wet ingredients into flour mixture until just combined. Scoop batter into the prepared muffin cups. Whole-Wheat Sweet Potato Muffins The combination of whole wheat and sweet potato makes this muffin a nutritional powerhouse. The molasses adds just a touch of sweetness.
