The term " char kway teow " is a transliteration of the Chinese characters 炒粿條 (in simplified Chinese 炒粿条). The dish's name is Hokkien (chhá-kóe-tiâu?), but the dish may have its roots in Chaozhou in China's Guangdong province and is mostly associated with the Teochew. Noodles: Char Kway Teow ("CKT") is made with wide, flat fresh noodles, available in the refrigerated section of Asian grocery stores and some supermarkets in the fridge section (Harris Farms in Australia). Char Kuey Teow is basically flat rice noodles stir-fried with shrimp, bloody cockles, Chinese lap cheong (sausage), eggs, bean sprouts, and chives in a mix of soy sauce.

The ingredients needed to make Kwey teow:
  1. Prepare 1 kg fresh rice noodles
  2. Prepare 250 g thinly sliced chicken thigh/brest
  3. Make ready 100 g squid rings
  4. Take 50-100 g pealed prawns
  5. Take 2 Tbs sambal olek (Asian chilli paste)
  6. Get 3 Tbs light soy sauce
  7. Prepare 3-4 cloves garlic (chopped)
  8. Prepare 2 spring onion(finely sliced white seperated from green)
  9. Make ready 50 g bean sprouts
  10. Prepare 1/2 a lemon
  11. Get 1-2 tsp sesame oil
  12. Make ready 2 Tbs Chinese cooking wine
  13. Take 2 eggs beaten till frothy
  14. Prepare salt n pepper for eggs
  15. Get 2 Tbs olive oil
  16. Take 3-4 champignons sliced

Mix seasoning ingredients in a bowl. Push all the fried ingredients to one side and add in kway teow. Then add the fishcakes and the prawns. I'm happy to say the visit was highly enjoyable and enlightening, and my Vegetarian Kway Teow super delicious!

Instructions to make Kwey teow:
  1. Heat oil in wok or deep saucepan add garlic, white part of spring onion and fry for 2 minutes.
  2. Add sambal olek fry for 2 minutes.
  3. Add chicken fry till just cooked
  4. Move chicken mix to 1 side of pan away from heat, add beaten eggs and scramble and season with salt and pepper till cooked then combine altogether with chicken mix.
  5. Add sliced mushrooms, stir fry for 1 minute
  6. Add squid and prawns stir in with mix till just cooked.
  7. Add rice noodles and stir till the noodles fully coated with mix
  8. Add soy sauce, sesame oil and Chinese cooking wine and stir for 1-2 minutes.
  9. Add green part of spring onion and bean sprouts stir for 1- 2 minutes​. And you're​ done.

Then add the fishcakes and the prawns. I'm happy to say the visit was highly enjoyable and enlightening, and my Vegetarian Kway Teow super delicious!
