  3. Add Tomatoes (group 4) and Okra. Cook 15 minutes. Add swordfish and cook 5 minutes on slow heat. Finish with cilantro.

Stir in the lemon juice and green onions. Season to taste with salt, pepper, and hot sauce. Serve the gumbo on its own or over hot cooked rice, and garnish with green onions. Cook roux until brown but not burnt. Add garlic and saute until soft.
