The ingredients needed to make Shrimp Creole:
  1. Get 1 bellpepper, chopped
  2. Take 1 celery stalk, chopped
  3. Prepare 1 onion, chopped
  4. Take 1 tbsp Garlic, chopped
  5. Prepare 1 tbsp olive oil
  6. Take 1 can diced tomatoes with bellpepper, onion and cellery
  7. Get 1 can Tomato sauce- large can or 2 8 oz cans, add water as needed
  8. Take 2 Creole Seasoning
  9. Prepare 1 tsp Gumbo Filé
  10. Take 2 fresh bay leaves
  11. Prepare 1 lb Wild Caught Gulf Shrimp
  12. Take hot sauce

Add the seafood stock, tomatoes, Worcestershire, hot sauce, and bay. Heat to boiling; reduce heat to low. Heat oil and make a dark roux with flour. Combine onion, celery, green pepper and garlic to make a mirepoix and add to roux.

Steps to make Shrimp Creole:
  1. Clean and devain shrimp, wash, place in bowl, sprinkle creole seasoning on top, cover and place in fridge.
  2. Turn on stove to med. High, then place chopped garlic, bellpepper, onions, and celery in pan.
  3. Drizzle olive oil over vegetables.
  4. Season with a dash of creole seasoning and hot sauce
  5. Stir the vegtables until tender.
  6. Stir in can tomatoes, cook for 5 min.
  7. Add tomato sauce
  8. Add 2 bay leaves; Creole Seasoning and Hot Sauce to taste; add 1 tsp Gumbo Filé.
  9. Cover and cook sauce for 1 hour; stir occassionally, and add water as needed.
  10. Add shrimp for 10 minutes or until thoroughly cooked. Be sure to check so shrimp dont over cook.
  11. Discard bay leaves
  12. Serve with Jasmine rice or rice of your choice.

Heat oil and make a dark roux with flour. Combine onion, celery, green pepper and garlic to make a mirepoix and add to roux. Stir in stewed tomatoes, tomato sauce, Worcestershire sauce, chili powder, and red pepper sauce. Bring to a boil, stirring frequently. Add chili powder and sauté until caramelized.
