The ingredients needed to make Egg Sandwich:
  1. Make ready 8 Bread slices
  2. Get 8 Boiled eggs
  3. Prepare 60 gms Butter (soft at room temperature)
  4. Prepare as per taste Salt
  5. Get 1 generous pinch of crushed Black pepper
  6. Take 1/2 cup Indian style green chutney** - homemade or store bought

  8. Prepare 7-8 Black/ Green olives sliced (optional)
  9. Get 8 slices Pickled Jalepenos chopped (optional)
  10. Get Note :** I have used my homemade Tomato Coriander chutney here

Season eggs with salt and pepper. Meanwhile, spread mayonaise on bread and place cheese. Place the cooked egg on top of the cheese, so it will melt. Top with other slice of bread.

Instructions to make Egg Sandwich:
  1. Peel the boiled eggs and separate the egg whites and the yolks.
  2. In a food processor or mixer grinder jar add in the egg whites, butter and salt as per taste and blend it. Check salt and if required add more and blend again. (If you don't have a large jar you can do in two batches)
  3. Once done, add a generous pinch of crushed black pepper and mix well. Now apply the chutney on the bread slices one by one.
  4. Spread the egg whites and butter mixture on it and if you want add in some olives and jalepenos. Now put another bread slice on it with chutney spread on it too. Wrap it with a cling film and refrigerate it for about 15-20 minutes to firm the stuffing so that it's easy to cut the sandwich.
  5. Once it firms up, cut the bread sandwich into half diagonally or vertically whichever you want to cut with a sharp serrated knife along with the cling film wrapped. After each cut, wipe the knife with wet kitchen tissue or towel to get clean cuts. Once cut, remove the cling wrap and serve it. Bon Appetit !
