Remove turmeric from wok and set aside. Using the turmeric oil, fry ginger and garlic until golden brown. Remove from oil and set aside. Turn off the heat, add in chillies, vinegar, sugar and salt into same oil.

  1. Put the spices ingredients into a food processor or a blender, blend with high speed until become a smooth paste.
  2. Use high heat. Fry the marinated fish until turns into golden brown colour. Set aside.
  3. Then change to medium heat.Sauté the ground spices with small amount of cooking oil, add kaffir lime leaves, bay leaves and lemon grass. Fry them until fragrance.
  4. Add in gram bean and carrots, cook them until soften. Add in salt, sugar and vinegar. Stir until well combined. until fragrant. Pour some water into it. Stir. - Add lime juice. Stir and wait until it turns into thick liquid.
