- Prepare 2 tsp chana dal
- Get 3 tsp coriander seeds
- Take 5 Red chillies
As many of my readers are asking me to share more rice varieties for lunch box, I thought of posting this easy, one pot rice recipe made using our Indian pressure cooker. Tendli or Tondli is Ivy Gourd (Kovakkai) in Marathi. Tindli Rice is a spicy rice made using Ivy gourd and masalas. Traditionally Maharashtrians use Goda masala to make this yummy rice.
Instructions to make Yummy Ivy Gourd Rice:
- Chop the vegetables needed.
- Take the pan and sauté the Chana dal, Coriander seed and red chilli for three minutes without adding oil. [Ignite in Medium Flame]
- After few minutes, when the heat gets reduced blend the above-mentioned ingredients and keep aside.
- Take the pan and ignite in medium flame. Add Oil to it, after the oil gets heated, add mustard to it. Once the mustard flutters, add Urad dal and saute it until it turns golden brown. Add the chopped vegetables and roasted peanuts to it and saute it.
- Add turmeric powder, salt accordingly and add the mixture which we blended to the pan and saute it again until the veggie gets cooked well[Sprinkle water and place the lid over the pan for ten minutes to get cooked]
- Add Boiled rice to the cooked veggie and mix it well.Garnish with Coriander leaves and serve it with tomato raita. Yes our yummy Ivy Gourd Rice is ready
