- Prepare for the fish
- Prepare 4 tilapia filets
- Get 1 salt & black pepper (to taste/ as needed)

- Get 1 large sautee pan that has a tight fitting lid ( i made a greased parchment paper lid as well)

- Make ready 1 salt & white pepper ( to taste/ as needed)
- Prepare 1 tomato ( peeled, seeded, diced)
- Make ready 2 tbsp parsley (finely chopped)
Poaching is a good technique for cooking lean fish like tilapia, cod, sole, haddock, snapper, or halibut as well as fatty fish like salmon or trout. It is a type of moist-heat cooking technique that involves cooking by submerging a food item in a liquid usually at a low temperature. Poaching preserves moisture and adds flavor without adding fat. Add the broth and thyme to a frying pan then bring to a boil over high heat.
Instructions to make Poached Tilapia:
- season the tilapia
- heat the first 2 tbsp's of butter over medium high heat. ( you can use a little more butter if youd like)
- add the minced shallots- saute until translucent.
- add the tilapia to the pan with shallots
- pour in the wine
- cover the pan and reduce the heat to low.
- cook until the tilapia is completely cooked and the wine is almost reduced all the way ( about 10 minutes)
- when cooked, remove the tilapia and set aside (covered to keep warm.)
- add the cream to the reduced wine and swirl it into a sauce over medium low heat, scraping the pan to release cooked particles stuck to the pan .
- mix in the remaining butter to thicken the sauce.
- As it thickens, you will need to add salt and white pepper to give your sauce flavor. taste and adjust seasoning.
- strain the sauce if desired. mix in the tomatoes and pour the sauce over the cooked tilapia. garnish with chopped parsley and enjoy!
Poaching preserves moisture and adds flavor without adding fat. Add the broth and thyme to a frying pan then bring to a boil over high heat. You may need to flip the tilapia if they are thicker than the broth is deep. Once the first two fillets are finished cooking, carefully transfer them to a platter or serving dish. Place the sliced onions in the bottom of an oven proof dish.
