Prepare a paste by adding the onion, garlic, and ginger to a blender with a splash of water and blending until smooth. Warm the oil in a medium saucepan over medium-high heat. - In the meanwhile start making the sauce. Fry the onions in the oil until soft and translucent then add the garlic and ginger and fry for another 30 seconds.
- Add all the spices and fry for a minute before adding the tomatoes and tomato paste. Simmer for 5 minutes then add the cream and sugar then simmer for 10 minutes.
- Add the roasted cauliflower and butter and stir together then allow to simmer for 5 minutes. Season to taste and serve.

To a large bowl, Add the chopped cauliflower florets, drizzle oil and lemon juice and toss well to coat. In a small bowl mix all the spices and salt.
